No-nonsense Treacle Pud
This one is so easy you can do it whenever you like. It takes five minutes from cupboard to plate (a little longer if you want to make some custard).
OK here goes:
Serves 6
200g Self Raising Flour
100g Vegetable suet
100g Vanilla caster sugar (or better still 80g of sugar and 30g of warmed golden syrup)
Milk.
Golden Syrup.
While you are gathering the dry ingredients together zap a few tablespoons of golden syrup in the microwave to warm and hence loosen it up.
Mix the dry ingredients in a bowl and pour in a little warmed syrup and sufficiet milk to bind to a heavy dropping consistency.
Grease some individual 1/4pt plastic pudding bowls and pour warmed syrup into the bottom of each. Three quarters fill the bowls with the pudding mix and cook in a medium microwave until the mixture is no longer wet on the top. Try it a couple of times to get the timing right on your microwave. In mine at 500w setting one pudding will take around 40sec to 1min. The syrup will bubble and boil and you'll undoubtedly need to clean the microwave table after making these!
As soon as they are cooled turn then out onto a warm plate. The boiling syrup will have cooked the pud nicely giving it a lovely caramelised top but if they are misshapen, looking a bit like small volcanoes don't worry, that's perfectly fine because to finish it off fill the cratered top of the pud with clotted cream or pour over hot custard.
